The Key to Easy Baking: Mastering Cake Pan Release

When I started baking, one of my biggest issues was to ensure that my cake sis not stick to the pan. With that in mind, I usually would buy nonstick pans but quickly realized that was not the solution to my problem.


The engineer in me needed to find the root cause so i went on a search for the best cake pan release. I did try some sprays, but that did not do the job for me.


After trial and error, here is the recipe that worked out best for me:


RECIPE

  • 1 cup shortening 

  • 1 cup vegetable oil (or preferred oil) 

  • 2/3 cup flour


PROCESS

Place these ingredients into a mixer and Mix all until smooth !!! 😎 Be patient! I can say that now hahahah.

STORAGE

You can store it in a covered container at room temperature or you can refrigerate it. At room temperature though, you may find that after some time the homogenous while mixture begins to liquefy. It's normal, remember it's oil-based, and with heat, it can liquify. All the ingredients are in your pantry so just make more ;)


TIPS

Apply generously to coat your cake pans before putting in your batter. I say this again - BE GENEROUS with your pan release and do not cut any corners. Make sure to FULLY cover the pan - base, sides, creases ... EVERYTHING!


Then bake as you would, and once you pull the pan out of the oven upon completion of baking, flip out the cake as soon as you can. Use your mittens because the pan may still be hot and you do not want to burn yourself. I typically flip my cakes out of the pan within 5 minutes of taking them out of the oven.  I get a flawless release every time.
