Creamy Meatball & Veggie Pasta: The Weeknight Meal That Actually Gets My Kids to Eat

Getting my kids to eat actual food is literally a battle. šŸ˜…

So when I find something they will DEVOUR with zero complaints? I am holding onto that recipe for dear life. This creamy meatball pasta is that meal.


Why This Recipe Works (For Busy Moms)

Under 30 minutes. Veggies hidden in. Protein packed. And the kids? They ask for seconds.


I am not trying to be a fancy cook. I am just trying to feed my family something that tastes good and does not feel like ANOTHER thing on my never-ending to-do list.

Because between baking orders, answering DMs, keeping tiny humans alive, and just surviving the day ... dinner needs to be EASY.

It needs to work. It needs to make everyone happy.

This does all three.


Creamy Meatball & Veggie Pasta

Under 30 minutes | Family-friendly | One-pan sauceServes: 4–6 | Prep + Cook Time: About 30 minutes


Ingredients:

  • 12 oz Barilla Protein+ pasta

  • 1–2 tbsp olive oil

  • 1 cup fresh tomatoes, chopped

  • ½ medium onion, chopped

  • 1–1½ cups mixed vegetables

  • ~12 cooked meatballs, sliced or halved (or just use ground meat and add in to cook along)

  • 1 cup heavy cream

  • ½–¾ cup freshly grated Parmesan cheese

  • ½–1 cup reserved pasta water

  • Your favorite seasonings, to taste

  • Salt & pepper, to taste


How to Make It:

Step 1: Cook the pasta according to the package directions. Before draining, reserve about 1 cup of pasta water. Drain the pasta and set aside.


Step 2: Build the Base. Heat olive oil in a large skillet over medium heat. Add the onions, tomatoes, mixed vegetables, and meatballs. Season to taste.


Step 3: Let It Cook Down. Cook for several minutes, stirring occasionally, until the vegetables are tender and the tomatoes and onions have softened. Everything should be nicely seasoned.


Step 4: Make It Creamy. Lower the heat and pour in the heavy cream. Stir well, then add the Parmesan cheese. Continue stirring until the cheese melts into the cream and creates a smooth, creamy sauce.


Step 5: Add the Pasta directly into the skillet and toss everything together.


Step 6: Use That Pasta Water. Slowly add ½ cup of the reserved pasta water, stirring as you go. Add more if needed until the sauce reaches your favorite consistency.


Step 7: Finish & Serve!!!mLet everything simmer together for another 2–3 minutes, allowing the pasta to soak up all that creamy, cheesy sauce. Top with a little extra Parmesan and serve warm.

This is one of those "use what you have" family meals. I almost forgot I had the mixed vegetables in the fridge, tossed them in, and they ended up being perfect in this pasta.

And don't skip the pasta water! That little bit of starchy water helps loosen the creamy sauce and brings everything together beautifully.


Real talk: I don't measure things perfectly every time. I use what I have on hand. If you have different veggies, use them. If you have a different pasta, go for it. The point is not perfection, the point is getting real food on the table that your family will actually eat.
